Dry Kala Chana

This recipe of dry kala chana is a special punjabi recipe and the dry kala chana serve as the best complement with poori’s and paratha’s along with sooji ka halwa.

The simply boiled kala chana can be the best breakfast for a regular day and can also be serverd with chapatis for dinner. This recipe can be best for breakfast, brunch, lunch or even dinner.

Kala chana can be served with puri, roti, naan, bhatura or even plain bread. We can also use the leftover chana as a stuffing inside bread, topped with slices of onion, tomato, cheese and grilled/toasted and you have an amazing chana cheese sandwich ready.

Ingredients

  • 2 cups kala chana
  • 1 small ginger julienned
  • 1 tsp cumin seeds
  • 1 green chili chopped
  • ¼ tsp red chili powder
  • ¼ tsp black pepper powder
  • ¼ tsp garam masala powder
  • ½ tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp cumin seeds powder
  • 1 tsp chaat masala
  • 1 tsp amchur powder
  • ½ cup chopped coriander leaves
  • 1 lemon sliced
  • 4-5 cups water
  • 1 tsp salt
  • 3 tbsp oil
  • Salt to taste

Method:

  • Wash the kala chana in running water for 3-4 times and then soak the kala chana overnight. Once they become plump it means they are completely soaked.
  • Boil the chana in a pressure cooker with 1 tsp salt for 20-25 minutes till the chana is completely cooked. Once they get completely cooked strain the chana.
  • Heat 3 tbsp oil in a pan on low flame , once the oil get heat properly add cumin seeds till they splutter
  • Now add chana and mix well.
  • Now add the julienned ginger and chopped green chili.
  • Add garam masala powder, red chili powder, coriander powder, amchur powder, cumin seeds powder, black pepper powder and salt to the chana.
  • Mix all the chana and spices well and let it get cook properly in the masala for a couple of minutes.
  • Keep on stirring so that the dry chana masala do not stick to the bottom of the pan.
  • Garnish chana with chopped coriander leaves and serve kala chana hot with wedges of lemon.

 

Dry Fruits Ladoo

Dry fruits ladoo or laddu – an easy and quick recipe for making healthy and delicious dry fruits ladoos for the festive season. this recipe is without ghee/oil and sugar.

There is no exact recipe to make dry fruits ladoos. The proportions of the dry fruits can vary according to your choice. just make sure the dates & figs are a little extra. since the dates and figs here help in binding the ladoos. there is absolutely no need to add any sugar to the recipe. the sweetness from the dates, figs and raisins makes for enough sweetnees in the ladoos…. in fact a little extra sweet.

The best part of this ladoo recipe is that they can be had for the navratri fasting season giving a good dose of nutrition and energy. These ladoos can also be taken with a glass of hot milk for breakfast.

Ingredients

  • 1 cup chopped dates
  • 2 to 3 tbsp almonds
  • 2 tbsp raisins
  • 1 to 2 tbsp cashews
  • 8-9 whole dry figs
  • 1 to 2 tbsp desiccated coconut (optional)
  • ½ tsp green cardamom powder

 

Instructions

  • Firstly Roast the almonds in a pan till they get browned.
  • Keep on stirring the almonds.
  • While the almonds are roasting, chop down the dates and figs.
  • In a grinder add the roasted almonds, chopped dates, figs, raisins, almonds, desiccated coconut and cardamom powder.
  • Grind till it form a coarse mixture and spread on a tray.
  • Make small balls from your hands and the dry fruit ladoos are ready.
  • Serve with some dry fruits ladoos immediately or store in an air tight container and refrigerate. Dry fruits ladoo stays good for a few days.

Sabudana Khichdi

Sabudana khichdi mainly made during fasting days like navratri, mahashivratri or ekadashi. Sabudana khichdi is an easy recipe to prepare and is a good recipe to be made during fasting days but it requires little experience to get the perfect texture in the sabudana.

When you make the sabudana khichdi, you have to adjust the soaking time. for some 2-3 hours is fine. For some you don’t even need to soak them in water, just cover the sabudana with water for some time and you are done.

The khichdi is loaded with carbohydrates and the proteins coming only from peanuts.

Ingredients:

  • 1 cup sabudana
  • 2 small size potatoes
  • ½ cup roasted peanuts
  • 8-10 kadi patta (optional)
  • 1 green chili finely chopped
  • 1 tsp jeera
  • ½ tsp sugar
  • ½ tsp lemon juice
  • 2 tbsp oil
  • salt as required

 

Instructions:

  • Soak sabudana for 2-3 hours.
  • Drain the sabudana very well and keep aside
  • Boil the potatoes and then peel and chop it into cubes.
  • In a pan roast the peanuts till they are browned and make a coarse powder in a grinder.
  • Mix the coarsely powdered peanuts, salt and sugar with the drained sabudana.
  • Heat oil in a pan and add the cumin seeds till they crackle and get browned.
  • Now add green chilies and fry for half a minute.
  • Now add potato and saute for 1-2 minutes.
  • Add the sabudana. keep on stirring the mixture.
  • When the sabudana looses their opaqueness means they are cooked.
  • Don’t over cook as they might become hard.
  • Mix well and serve sabudana khichdi hot.
  • Garnish it with coriander leaves and drizzle with some lemon juice.
